Ingredients
2Tbspolive oil
1Tbsp unsalted butter
1 1/2lbsyellow onions
1tspsugar
1/2tspsmoked sea salt
3Tbspbalsamic vinegar
DashLiquid smoke, optional
Instructions
Heat a medium pot (preferably cast iron) over medium heat. Add olive oil and butter.
Slice onions into 1/4 inch strips. Add to pan. Sprinkle sugar and smoked sea salt and toss thoroughly to combine.
Stir sporadically for the next 45-60 minutes. Onions will slowly start to brown, which means they're caramelizing. This is what you want!
Once onions are a deep golden brown hue, remove from heat. Add balsamic vinegar and stir to combine. If you'd like added smokiness, feel free to add in a dash of liquid smoke.
Allow to completely cool before transferring to a glass jar to store in your refrigerator. Jam should keep for up to 2 weeks.
