Spiced Apple Muffins
Warm, spicy, and with little pockets of tender apple: these Spiced Apple Muffins are the perfect breakfast treat! topped with a crunchy cinnamon topping, they're mouthwateringly delicious.

- 1 1/4 cups brown sugar
- 1/2 cup neutral oil, like canola
- 1 egg
- 2 tsp vanilla
- 1 cup buttermilk
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/2 tsp salt
- 2 1/2 cups flour
- 1 1/2 cup Granny Smith apple, chopped
For the cinnamon crunch topping:
- 1/3 cup brown sugar
- 1 Tbsp butter, melted
- 1 tsp cinnamon
Preheat oven to 350 degrees.
In a medium bowl, whisk the oil, brown sugar, egg, and vanilla together until sugar is combined.
In a separate bowl combine flour, baking powder, spices, and salt.
Alternating between flour mixture and buttermilk, mix 1/3 of each in to the sugar until incorporated. Be careful to not overmix! Fold in chopped apples.
Line two muffin pans with liners. Note that this recipe makes 18 muffins, although you may be able to get a full 24 if you use less batter in each muffin!
Prepare the topping: in a small bowl combine melted butter, brown sugar, and cinnamon. Top each muffin with brown sugar topping.
Baked for 30 minutes until a toothpick inserted into a muffin comes out clean, and brown sugar topping is melted.
