Spiked Rhubarb Soda

Rhubarb, honey, and lemon flavors are perfectly combined in this refreshing summer cocktail. Rhubarb is readily available in the summer at many local markets and grocers.

Ingredients

For the Spiked Rhubarb Soda:

  • 1 1/2 oz vodka
  • 1 1/2 oz Rhubarb simple syrup recipe below
  • 3 oz rhubarb soda

For the rhubarb simple syrup:

  • 1 cup lemon honey
  • 1 cup water
  • 3 cups (about 4 stalks) rhubarb, chopped

Instructions

For the Spiked Rhubarb Soda:

  • In an ice filled cocktail shaker, add vodka and rhubarb simple syrup.
  • Shake until chillllllled.
  • Pour in to an ice filled low ball glass. Top with rhubarb soda, garnish with lemon.

For the rhubarb simple syrup:

  • In a saucepan, combine honey and water. Bring to a simmer, swirling pan to dissolve honey,
  • Once dissolved, remove from heat and add rhubarb.
  • Allow rhubarb to steep for at least 20 minutes while simple syrup cools.
  • Once completely cool, strain rhubarb from simple syrup and store in a glass jar in the refrigerator until ready to use!
