Spinach Artichoke Dense Bean Salad

- 1 15 oz can garbanzo beans, drained and rinsed
- 1 15 oz can cannellini beans, drained and rinsed
- 1 cups spinach, chopped
- 1 15 oz can artichokes, drained and chopped
- 1/3 cup chopped green onion
- 1/2 cup Greek yogurt
- 1/4 cup mayonnaise
- 1/2 cup grated parmesan cheese
- 1 clove garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp lemon zest
- 1/2 tsp salt
Combine ingredients through green onions in a large bowl.
In a small bowl combine the remaining ingredients. Add about 1 tablespoon of water and whisk to combine.
Pour dressing over the spinach, artichoke, and bean mixture and toss completely to combine.
Salad will keep in the refrigerator for up to 1 week.
