Ingredients

  • 1 15 oz can garbanzo beans, drained and rinsed
  • 1 15 oz can cannellini beans, drained and rinsed
  • 1 cups spinach, chopped
  • 1 15 oz can artichokes, drained and chopped
  • 1/3 cup chopped green onion
  • 1/2 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 1/2 cup grated parmesan cheese
  • 1 clove garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp lemon zest
  • 1/2 tsp salt

Instructions

  • Combine ingredients through green onions in a large bowl.
  • In a small bowl combine the remaining ingredients. Add about 1 tablespoon of water and whisk to combine.
  • Pour dressing over the spinach, artichoke, and bean mixture and toss completely to combine.
  • Salad will keep in the refrigerator for up to 1 week.
