Summer Fruit Salad with Watermelon, Peaches & Feta

Sweet watermelon and peaches + juicy berries + salty feta + fresh mint + bright lime + a touch of flaky salt. It’s essentially fruit salad that eats like a composed salad—fresh, colorful, and much more interesting than the bowl of cut-up fruit you remember from childhood.

Ingredients

  • For the salad
  • 4 cups watermelon cut into bite-sized pieces
  • 2 ripe peaches sliced or cut into wedges
  • 1 cup blueberries
  • 1 cup blackberries
  • 4 oz feta crumbled
  • ¼ cup fresh mint leaves torn
  • Zest of 1 lime
  • Flaky sea salt for finishing
  • For the sweet lime vinaigrette
  • 2 tablespoons fresh lime juice
  • 3 tablespoons extra-virgin olive oil
  • –2 tablespoons honey to taste

  • Make the vinaigrette. Whisk together the lime juice, olive oil, and honey until emulsified. Taste and adjust the honey so the vinaigrette is slightly sweet and balanced by the acidity of the lime.
  • Combine the salad. Add the watermelon, peaches, blueberries, blackberries, feta, and mint to a large bowl or platter.
  • Dress gently. Drizzle the lime vinaigrette over the fruit and gently toss, being careful not to break up the berries or feta.
  • Finish. Sprinkle with fresh lime zest and flaky sea salt.
  • Serve. Serve immediately for the freshest texture, or refrigerate briefly before serving.
