Watermelon Caprese Salad

Nothing beats this fresh Watermelon Caprese Salad! It's the perfect summer recipe. Juicy watermelon is paired with fresh tomatoes, and topped with creamy burrata cheese and basil. Add a drizzle of olive oil, some salt and fresh cracked pepper, and you have your new favorite salad for the season!

Ingredients

  • 1/2 to whole small mini seedless watermelon (about 6 cups)
  • 4 medium ripe tomatoes
  • 12 oz burrata
  • 1 Tbsp olive oil
  • 2 Tbsp fresh basil chiffonade
  • Salt and pepper to taste

Instructions

  • Remove rind from watermelon, slice in to 1/2 inch thick slices. Slice tomatoes at similar thickness.
  • Arrange tomatoes and watermelon on platter. Tear burrata n to pieces, top watermelon and tomatoes.
  • Drizzle salad with watermelon, add salt and pepper to taste, and top with fresh basil.
  • Enjoy!
