30 Minute Classic Minestrone Soup

This simple recipe is one I return to again and again, and for good reason: it’s easy to make and even easier to devour! Read on to learn more about this delicious classic soup.
What Is Minnestrone Soup?
Minestrone is an Italian soup which combines various vegetables, pasta or rice, beans, and tomatoes in a rich broth. It reminds me of a canned variety of soup I had growing up, making it extra comforting (you know the red label one!). Being that it’s packed with so many delicious ingredients, it’s super filling and satisfying.
How To Make Minestrone Soup: The Ingredients
Typically classic minestrone soup will feature some or all of the following ingredients:
- Carrot
- Celery
- Onion
- Garlic
- Tomatoes
- Spinach
- Zucchini
- Dried and fresh herbs
- Pasta
- Beans
- Parmesan Cheese
How To Make Minestrone Soup: The Method
There are two simple steps in this classic minestrone soup: sauté and simmer.
- Sauté your mirepoix. Carrot, celery, and onion are the trifecta known as mirepoix. Garlic and zucchini are added and it’s all sautéed until slightly tender.
- Add your liquid and simmer. Next up is the stock, water, canned tomatoes, and parmesan rind. The rind is added for extra flavor! This entire mixture will simmer for about 15 minutes before you add the remaining ingredients.
- Toss in the delicates. Chopped spinach and canned cannelloni beans are added in the last couple minutes of cooking, allowing the spinach to wilt and the beans to warm through.
What To Serve With Classic Minestrone Soup
- Shredded Parmesan Cheese
- Red Pepper Flakes
- A light red wine, like a Pinot Noir, Lambrusco, or Schiava
- Hunks of crusty bread to soak up the flavorful broth

30 Minute Classic Minestrone Soup
Ingredients
- 4 Tbsp olive oil
- 1 medium yellow onion, chopped
- 3 whole carrots, peeled and chopped
- 3 stalks celery, chopped
- 4 cloves garlic , minced
- 1 medium zucchini , chopped
- 1 Tbsp dried oregano
- 1 Tbsp dried thyme
- 1 tsp salt
- 1/2 tsp pepper
- 15 oz can diced fire roasted tomatoes
- 4 cups vegetable stock
- 2 cups water
- 2 inch piece parmesan rind
- 1 cup ditalini pasta, or other short grained pasta
- 2 cups fresh spinach, roughly chopped
- 12 oz can great northern or cannellini beans
Instructions
- Add olive oil to a large dutch oven or stock pot set over medium heat. Add onion, carrots, celery, garlic, zucchini, and spices. Saute for about 5 minutes, stirring every so often to encourage even cooking.
- Add canned tomatoes, stock, water, and parmesan rind. Allow to cook for 10 minutes over medium low heat.
- Add pasta and note the cook time on the package. It should be around 10 minutes. Cook until pasta is al dente.
- In the last few minutes of cooking, add the chopped spinach and cannelloni beans. Stir to combine!
- When ready to serve, remove what remains of the parmesan rind. Serve with parmesan cheese and cracked pepper!
