Almond croissants: easily my favorite baked good. Homemade croissants are an elaborate process, and while I’m never one to shy away from a complex recipe – sometimes, ease and convenience are simply more appealing.

Luckily, the flavors of an almond croissant are easy to replicate, as made evident in these Almond Croissant Buns! Are they a traditional croissant recipe? No. Do they require some store-bought items? Yes. Will the world end? Absolutely not…but it may pause once you take your first bite. Read on to learn how to make this shortcut to a delicious almond croissant!

What Makes An Almond Croissant So Delicious?

The key to the best almond croissant lies in its filling. Almond paste can provide intense almond flavor, and can be homemade or store bought. In this recipe I use a homemade frangipane, which is an almond pastry cream.T o make a homemade version you need just butter, almond flour, eggs, sugar, and almond and vanilla extract. Additionally, almond croissants are topped with a delicate sugary crunch topping, along with sliced almonds. Mind you, this is all in addition to the flaky light layers of dough that make up a croissant. Is your mouth watering yet?!

Ingredients

  • Puff Pastry
  • Butter
  • Almond Flour
  • Sugar
  • Eggs
  • Almond and vanilla extract
  • Egg and milk (for the egg wash)
  • Powdered Sugar
  • Sliced Almonds

How To Make Almond Croissant Buns

  • Ensure puff pastry is thawed to room temperature. Preheat oven to 375 degrees. Spray muffin tins with cooking spray, noting that this recipe makes 16 buns. 
  • Combine filling ingredients in a medium bowl. Use. and mixer to completely combine the mixture until smooth. 
  • Spread one sheet of puff pastry on a clean working surface. Use a rolling in to gently roll the sheet out to give yourself a little more space to work with. 
  • Spread half of the almond filling over the puff pastry. Use a pastry wheel or pizza cutter to slice the puff pastry sheet in half lengthwise, then slice each half into 4 equal strips. You will end up with 8 strips. 
  • Roll each strip up, and place into the prepared muffin tin. 
  • Combine the egg and milk together for an egg wash, and brush each bun liberally. Bake for 25-30 minutes, until buns are golden brown baked through. 
  • Remove from oven and using a paring knife as needed, gently remove each bun from the muffin tin and place on a cooling rack. Allow to cool for about 15 minutes. 
  • Dust with powdered sugar and top with sliced almonds. Enjoy!
