How To Make Brown Butter Butterscotch Krispie Treats
Like the classic treat, this recipe starts with a couple basic ingredients:
- Butter
- Marshmallows
- Vanilla Extract
- Crisp Rice Cereal
But what takes these gooey treats to the next level are two things: brown butter and butterscotch chips!
Brown butter and marshmallows are combined until the marshmallows melt, providing the quintessential gooeyness that Krispie treats are known for. Additional marshmallows and creamy butterscotch chips are folded in with the crisp rice cereal. It’s all pressed into a baking dish and cut into perfect squares!
How To Make Brown Butter:
- Place butter in a saucepan set over medium heat
- As the butter melts, gently swirl the pan to encourage even cooking
- Allow the butter to continue cooking over the heat, continuing to swirl the pan
- Once the butter starts to foam, you’ll notice brown bits n the bottom of the pan. These are the milk solids in the butter cooking, or better yet: browning!
- Once the butter is slightly speckled brown, remove from the heat and use a spatula or spoon to scrape up the brown bits to incorporate them into the butter
- Transfer the brown butter to a different dish to stop it from continuing to brown

Brown Butter Butterscotch Krispie Treats
Ingredients
- 1 cup unsalted butter
- 24 oz mini marshmallows
- 2 tsp vanilla
- 1 tsp butter
- 1 cup butterscotch chips
- 10 cups crisp rice cereal
Instructions
- Melt butter in a large stock pot set over medium heat. As the butter melts, swirl the pan every so often. Cook until the butter begins to smell toasty and brown bits appear on the the bottom of the pan. Use a spatula or spoon to scrape the brown bits, and add marshmallows, reserving 1 cup. Stir until the marshmallows are melted - add vanilla and salt.
- Add the crips rice cereal, reserved marshmallows, and butterscotch chips. Stir carefully to combine completely .
- Press mixture in a 9x11 pan that has been lightly coated with cooking spray. Sprinkle a few butterscotch chips on top, and allow to set for at least 30 minutes. Cut into squares and serve!
