Caprese Pasta with Italian Chicken Meatballs
This Caprese Pasta with Italian Chicken Meatballs is the perfect weeknight meal! Italian spiced chicken meatballs and homemade tomato sauce make this pasta extra special.

Ingredients
For the chicken meatballs:
- 1 lb groud chicken
- 4 garlic cloves divided
- 3/4 cup onion, finely minced, divided
- 2 tsp parsley flakes
- 1 tsp oregano ,
- 1/2 tsp thyme leaves
- 1/4 tsp marjoram
- Salt & Pepper
For the pasta:
- 1 lb spaghetti, (or fine pasta)
- 1 15 oz can tomato sauce
- 1 15 oz can fire roasted tomatoes
- 1 Tbsp tomato paste
- 1/2 tsp crushed red pepper flakes
- Salt & Pepper to taste
- 6 oz fresh mozzarella,
- 1/2 cup fresh basil chiffonade
Instructions
- Preheat oven to 375 degrees.
- In a medium bowl combine chicken, 2 garlic cloves, 1/2 cup minced onion, parsley, oregano, thye, and marjoram . Mix with hand to thoroughly combine. Using a cookie scoop, scoop meatballs onto a parchment lined baking sheet. Bake for 15 minutes, or until cooked through.
- Meanwhile, cook pasta according to directions. Be sure to salt the pasta water!
- While pasta is cooking, making tomato sauce. Add 1 teaspoon olive oil to medium saucepan. Add onion and garlic, sautéing until fragrant. Add tomato sauce, fire roasted tomatoes, tomato paste, and crushed red pepper flakes. Allow to simmer while remaining ingredients prepare.
- To seve: top pasta with tomato sauce, meatballs, fresh ripped mozzarella, and a handful of fresh basil. Dinner is served!
