We all have our thing. Growing up, dinner was always a nonnegotiable in my family. We always had something home cooked (or semi-homecooked) on the table. I’m so grateful for the instilled importance of mealtime that my parents bestowed on me.
Which is why my “I-have-no-energy-but-know-I-need-to-eat-something-like-an-adult” dinner is normally some form of bruschetta.
- Crusty bread.
- Creamy, spreadable cheese.
- Roasted fruit or veggie.
- Bottle of wine.
HIIIIIIII. I could eat like this every night, but that’s just not a very responsible thing to do.
This Charred Bruschetta with Smoked Cherries and Tangy Ricotta includes ingredients that are all grilled – which allows you to spend those precious last hours of dusky sunlight outdoors.
The bread gets a light drizzle of olive oil, a sprinkle of sea salt, and a few grinds of black pepper. Thrown on the grill, they inherit a smoky char.
And next up, the cherries. GOOD LORD these are delicious.
Sweet yet tart, with a roasted, jammy warmth. They’re the perfect balance with the tangy goat cheese and ricotta spread.
Be still my heart.
And my stomach. Because I could ACTUALLY eat this entire platter by myself.
Which again – if we’re being responsible adults here, is not a good idea.
Supervision, however, is highly recommended with this bruschetta.

Charred Bruschetta with Smoked Cherries and Tangy Ricotta
Ingredients
- 1/2 cup ricotta cheese
- 1/4 cup goat cheese
- 1/2 tsp fresh thyme
- 2 cups cherries, stemmed and pitted
- 1 lemon
- 2 Tbsp olive oil divided
- 1 French baguette
Instructions
For the tangy ricotta:
- In a small bowl, mix ricotta and goat cheese together. Add zest of lemon, and season with salt and pepper. Allow to sit will you prep other components.
For the smoked cherries:
- Pit the cherries. If you can afford it, a cherry pitter is an amazing investment!They also serve dual purpose for olives! If not, use the side of a knife to smash each cherry, picking the pit out.
- Add cherries to medium bowl, drizzling with 1 Tablespoon of olive oil. Season with salt and pepper.
- Heat grill to medium-high heat. Add cherries to a griller basket, adding it to the grill. Grill for about 10 minutes, until cherries are softened and fragrant.
- Remove cherries from grill, adding back to bowl. Add fresh thyme, tossing to combine. Set aside to cool slightly as you prep the baguette.
For the bruschetta:
- Slice baguette on a bias. Brush each case with remaining olive oil, season with salt and pepper.
- Grill for 1 minute per side - you just want the bread lightly toasted.
- Arrange baguette, tangy ricotta, and smoked cherries on a platter to serve.
