Cinnamon Raisin Cookie Energy Bites
If you’re anything like me, having a quick, nutritious, on-the-go snack is a must in my house. Whether I have a busy morning and need something to hold me over until I can make a proper breakfast, need a pre or post-workout nibble, or a mid-afternoon pick-me-up, snacks are key!
These Cinnamon Raisin Cookie Energy Bites are one of my favorite things to have in the refrigerator for any time one of the above mentioned scenarios happens. They’re quick to make and easy to devour! Read on to learn how to make these delicious bites!
Ingredients
- Rolled oats: The base for the classic energy bites, oats offer soluble fiber which will keep you full.
- Cashew butter: Rich and creamy, cashew butter is a great source of fat and helps bind the energy bites together.
- Pure maple syrup: Light sweetness is imparted from the maple syrup which is my go-to sweetener when I bake. It also helps bind the energy bites together along with the cashew butter.
- Cinnamon: A classic spice, cinnamon offers warmth.
- Raisins: I really love adding to these energy bites to emulate a fresh out of the oven cinnamon raisin cookie. If you aren’t a fan, feel free to omit!
- Flax meal : Flax is a great way to get protein, fiber, and omega 3’s in your diet. Flax meal is ground up flax seeds, which make it an easy addition to energy bites or any baked good. Its flavor is pretty mild, so you likely won’t even notice it’s there!
How To Make Cinnamon Raisin Cookie Energy Bites
- Combine all the ingredients except the raisins in a large bowl.
- Use spatula to combine everything completely. If the mixture appears too dry, add a small amount of maple syrup and continue stirring. Fold in the raisins.
- Using a cookie scoop or spoon, scoop mixture in to uniformly sized balls. Squeeze the mixture in your hands (using disposable gloves makes this process less messy!), and roll into balls.
- Place on a parchment or wax paper lined plate or baking sheet, and refrigerate for at least an hour, or until solid.
- Transfer energy bites to a covered container. Energy bites will last in the refrigerator for up to 2 weeks (if you don’t devour them faster!).
