The vegetarian diet is something that I’ve dabbled with. While I wouldn’t say I’ve ever considered myself a true vegetarian, I’ve certainly gone through phases where I’ve omitted meat from my diet. For one reason or the other, perhaps you’ve done the same?

How To Make Grilled Cauliflower Steaks
The term “steak“ of course elicits visions of thick slabs of red meat. Whether your’e a meat eater or not, the concept of a “steak” taking up a large portion of your plate has been borrowed in the vegetarian world for a number of recipes. Whether it’s cauliflower, zucchini, or mushrooms, “vegetarian steaks“ have become a popular summertime staple in the vegetarian diet.
While you’ll follow temperature guidelines to be followed to ensure food safety, vegetarian steaks need no such thing! Of course though, your desired doneness is still something to cook to!
Grilling Cauliflower Steaks
Making grilled cauliflower steaks couldn’t be simpler:
- Preheat your grill to about 500º. You’ll want it super hot to get that char!
- Slice the whole head of cauliflower down the middle, subsequently slicing 1/2-1 inch wedges forming your “steaks”.
- Drizzle with olive oil and add your desired seasoning. I keep it simple with salt and pepper since the steaks will be topped with a flavorful sauce.
- Grill until charred and tender!

- Garnish with fresh herbs, nuts, or citrus zest.
Flavor Combinations To Consider
This lemon and caper sauce is the perfect accompaniment for these grilled cauliflower steaks. It’s reminiscent of chicken piccata, which is one of my all-time favorite dishes! Add a sprinkle of fresh parsley for color and you have one gorgeous dish.

Grilled Cauliflower Steaks with Lemon Caper Sauce
Ingredients
For the Grilled Cauliflower Steaks:
- 2 large heads cauliflower
- 2 Tbsp olive oil
- Salt and pepper
For the Lemon Caper Sauce:
- 1 Tbsp olive oil
- 1/4 cup yellow onion, minced
- 2 cloves garlic, minced
- 1 large lemon, zested and juiced
- 1 cup vegetable stock
- 3 Tbsp capers, drained
- Pinch salt
- 2 Tbsp parsley, chopped
Instructions
For the Grilled Cauliflower Steaks:
- Preheat grill to about 500 degrees. You want it hot!
- Remove leaves from cauliflower heads, and carefully cut root out, removing as little of the core of the cauliflower as possible.
- Lie the head root side down, and with a very sharp knife slice the heads down the middle, and then cut 1/4-1/2 inch slices. You may only be able to get a few slices out of each head before the cauliflower starts to come apart. This is ok! Reserve that for another use.
- Place slices on a baking sheet and drizzle with olive oil. Sprinkle with salt and pepper.
- Place cauliflower slices on the grill, turning carefully after a few minutes, once the cauliflower has charred. Once it's just tender, it's ready to remove from the grill. Seat aside on a plate as you prepare the lemon caper sauce.
For the Lemon Caper Sauce:
- Add olive oil to a saute pan set over medium heat. Add onion and garlic, sauteéing until fragrant, about 2 minutes.
- Add the zest of your lemon. Halve the lemon, and using a citrus press, squeeze the juice directly into the pan. Add vegetable stock and stir the mixture to combine. Simmer for about 10 minutes, until sauce has thickened and reduced. Stir in capers.
- Top grilled cauliflower steaks with the sauce and garnish with parsley.
