Salmon is one of those summer meals that so many of us crave, but perhaps don’t make as often as we could or should. If you’ve always felt that making salmon takes too much time or is too intimidating, you have to try this recipe!

Simply grilled and topped with a flavor pack relish, this salmon is crave-worthy! Read on to learn more about this scrumptious summer recipe.

How To Make Grilled Mediterranean Salmon

Grilling salmon has to be one of my favorite ways to prepare it. It’s smoky, tender, and so delicious! In this recipe, I used my gas grill, but charcoal would be absolutely delicious.

I still wanted that smoky flavor that is reminiscent of the charcoal grill, so I actually used my smoker box to provide a layer of depth. Smoker boxes are a great solution if you don’t have access to a charcoal grill. They’re relatively easy to find and so simple to use! Here is the one that I use and love.

Steps to Make Grilled Mediterranean Salmon

Grilling salmon is easy! Follow these simple steps to get great results every time:

  1. Get the heat right. For a gas grill, I like cooking salmon indirect. This means that one area of the grill will be providing the heat, meaning on a three burner grill, you’ll only turn one burner on. In this recipe, I kept the temperature between 300 and 350°.
  2. Season the salmon. For this recipe, I kept it simple with salt, pepper, and a squeeze of lemon. The relish that will be served over the salmon is already packed with flavor, so I didn’t want to overdo it here!
  3. Liberally oil the skin side of the salmon. This will prevent sticking, which is a must when grilling fish! Given how easily the flesh flakes, you’ll definitely want to avoid it sticking to the grates of your grill. I opt for grapeseed oil when doing this.
  4. Cook it slow, but keep an eye on it. At this temperature, your salmon will likely be done cooking in 20 minutes or less. You’ll know that it’s ready when the fish easily flakes. I prefer my fish to be on the more tender side, so be sure you cook your own to your desired doneness!

How To Serve Grilled Mediterranean Salmon

The relish that is served on top of the salmon is where all the flavor is in this recipe. The relish includes salty, briny, and bright ingredients such as:

  • Castelvatrano olives
  • Kalamata olives
  • Capers
  • Red Pepper
  • Lemon
  • Oregano
  • Basil 

The ingredients are all chopped into bite-sized pieces, meaning you get a flavor punch in every bite. This relish is delicious served over other proteins like chicken, steak, or pork, or even as a topping for crostini!

Ingredients

  • 1 lb filet of salmon
  • 2 Tbsp olive oil
  • Salt
  • Pepper

For the Mediterranean Relish:

  • 1/2 cup Castelavtrano Olives
  • 1/4 cup kalamata olives
  • 1/4 cup Red Pepper chopped
  • 1 clove Garlic minced
  • 1 Tbsp Capers
  • Drizzle Olive Oil
  • 1 Tbsp oregano, chopped
  • 1 Tbsp basil, chopped

Instructions

For the grilled salmon:

  • Preheat your grill to about 300º, turning just 1 burner on.
  • If using a smoke box, fill box with wood pellets or soaked wood chips. Set on flavor bars of grill, allowing smoke to build.
  • Liberally oil the skin side of your salmon filet. Flip it right side up, seasoning lightly with salt and pepper.
  • Add salmon to grill on the opposite side of the grill that the burner is on, skin side down, allowing to cook for about 15 to 20 minutes, or until fish easily flakes.

For the Mediterranean Relish:

  • Meanwhile, prepare the relish.
  • Combine all the ingredients in a medium bowl and toss to combine.
  • Serve salmon on a bed of greens with the Mediterranean relish spooned over it.
