It’s Pizza Night!
Ever come across a recipe or a project that you think, “Wow, that looks easy! I could do that!”? And then never do it?
This wil not be one of those things, you guys.
Homemade pizza is the EASIEST thing to make. Before you scoff at me, saying, “Yea, sure – maybe for you”, in that pessimistic tone I know a few of you are probably thinking in – hear me out.
Sure, pizza dough can take a little time, can be finicky, and may not be in your repertoire. But I PROMISE it’s worth a try. Still not a believer? Pick up your favorite pizza dough at your grocery store or favorite pizza place.
But, rule number 1: dough must be fresh. No if’s, and’s, or but’s about it.
Plus, this is an EXPERIENCE NIGHT you guys! Have a little fun with it. Enlist in the help of your guests (or kiddos!). Get messy.
The Deets
Next rule: fresh, always. Get the freshest ingredients possible that you can get your hands on.
In addition, this would be a great time to try something new! Been eyeing that interesting looking smoked cheese at the grocery store? That spiced salami? That weird..um… what’s that vegetable called again?
THE TIME IS NOW.
Grilled Forager Pizza with Morels, Portobellas, and Truffle
Where my mushroom fans at?
Just call me OctoJamie, since I’m raising 8 hands. I freaking L-O-V-E all things mushroom. ALL OF THEM. Which makes it easy to have a love affair with truffles, like most normal people on this planet.
Their funky, garlicky, and just so….umami. So delicious.
I wanted the first pizza to be mushroom overload. Baby bellas and morels are meaty, offering a satisfying chew to each bite. Ricotta serves as the mild base on the ‘za crust, giving the pie a creaminess which perfectly compliments the depth of flavor from the shrooms.
A drizzle of truffle oil and a sprinkle of truffle salt, and you have ONE. BEAUTIFUL. PIZZA.

So simple: garlic oil brushed dough. Salty prosciutto. Spicy arugula. Creamy mozzarella. Tart balsamic.

While these pizzas were OBVIOUSLY delicious to eat, they were also incredibly fun to make. And pretty nostalgic for me, too. My mom would do homemade pizzas with us as kids all the time. She prepped the dough, and set out all the ingredients for us to make our own. Some included pepperoni smiley faces, while others simply included extra cheese. Regardless of how poorly dressed our pizzas were, one thing always remained constant: the pride we took when our personal little pies came out of the oven was almost enough to keep us from scarfing them down whole. Almost.
Lesson: make pizzas immediately with kids young and old, and prepare to make a new tradition.
