When life gives you deadlines to meet, social calendars to keep up with, wellness goals to crush, lists to check off, and (let’s be real) Mondays to conquer…what beats a healthy, quick, and simple supper?
Hint: NOT MUCH.
Here are 7 of my favorite fast, scrumptious, and nutritious meals that are my go-to dinners on my busiest weeknights. Some cook up quick in the oven, others slow cook all day. Either way, I bet you’ll find a couple favorites in this recipe roundup!
1. Korean BBQ Tacos with Kimchi Ginger Slaw
2. 20 Minute Smoky Cajun Shrimp & Grits
20 minutes is all you need for this incredible meal! Jumbo shrimp are tossed in a smoked paprika, garlic powder, and cayenne mixture, and quickly sautéed. They top a beautiful bowl of grits, with JUST enough cheese to make you feel all special inside. Mashed cauliflower would be a great substitution if you’re paleo!
3. Slow Cooker Balsamic Beef Stew
Now THIS is lightened up comfort food bliss! The classic Beef Stew gets a healthy and flavorful upgrade. Balsamic vinegar condenses as the stew cooks, imparting an incredibly rich and umami packed punch. Do yourself a favor and make a double batch of this if you’re slow cooker can handle it – it freezes great!
4. Sheetpan Chicken & Broccoli
Quick and nutritious 20 minute meals = a staple in my house. My workouts have frequented the p.m. timeframe, which means I’m ready for something fast, simple, and nourishing by them time I walk in the door. This dinner comes together in a flash, and chances are you have just about all the ingredients you need on hand right now to make this wholesome supper.
5. Slow Cooker Ropa Vieja
Who doesn’t appreciate a delicious, slow cooked meal….on a hectic weeknight?! Enter the convenience of the slow cooker. This Ropa Vieja is one of my favorite go-to slow cooker meals. It’s flavor packed and super versatile: serve over quinoa for dinner tonight, on top of dressed greens for lunch tomorrow, and stuffed in a pita for a quick on the go meal!
6. Chicken Meatballs with Spicy Sesame Zoodles
Can we all collectively agree that zoodles are NOT a trend, and are here to stay?! Glad we cleared that up. This version is packed with delicious spice and sesame flavor, and topped with protein-packed Asian chicken meatballs. I love making a big batch of these to have on hand all week long (if they last that long!).
7. 15 Minute Sriracha Lime Salmon
This delicious oven roasted salmon recipe is one I return to time and time again. The salmon is doused in a Sriracha-maple-lime juice marinade before baking in the oven for just 15 minutes! Healthy, light, and ready by the time you prep some quinoa, a veg-packed salad, or a quick stir fry. Dinner goals, right here.
