Ways to Upgrade Your S'mores Platter
While nothing is wrong with the standard crunchy graham, roasted marshmallow, and quintessential barred chocolate, I’m here to share some delicious ideas to take your s’more from “nice” to next level.
Homemade Graham Crackers
I’ve been making these incredible Homemade Graham Crackers for years! They’re chewy, dense, sweet, and salty. With the addition of wheat germ, they have a nutty flavor and texture that’s subtle, yet familiar. Once you have a s’more with these unbeatable graham “cookies” (if you really wanted to get technical!), I have a feel it will be hard for you to go back!
Fancy Chocolate Wafers
Think a peanut butter cup is the ultimate way to up level your s’more?
Think again.
These fancy chocolate wafers introduce new and exciting flavors to the classic dessert. Here’s how to make them!
Ingredients
2 cups semisweet chocolate chips
Variety of chopped additions such as coconut, dried cherries or other fruit, crystallized ginger, chopped citrus peel, chopped nuts
How To
- Add chocolate chips to a microwave safe dish. Heat in 10 second intervals, stirring chocolate chips after each interval to incorporate the heat throughout. This should take no more than 2 minutes. Be sure you aren’t microwaving more than 10 seconds at a time , as the chocolate chips can seize up and harden.
- Using a cookie scoop or tablespoon, add melted chocolate to a silicone muffin tin, or a regular muffin tin filled with liners. Top each cup with your desired ingredients.
- Freeze until chocolate is hardened, at least 1 hour.

Homemade Graham Crackers
Ingredients
- 1/2 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1/4 cup wheat germ
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter room temp
- 1/4 cup brown sugar
- 1 Tbsp honey
- 1 egg
Instructions
- In a medium bowl combine flours, wheat germ, cinnamon, baking powder and soda, and salt.
- In a separate bowl, use a hand mixer to thoroughly combine butter, brown sugar, and honey. Add egg, mixing to combine.
- Add dry ingredients to wet ingredients, mixing until just combined. Dough will be slightly sticky.
- Divide dough in to four. On a sheet of parchment that has been coated with flour, add 1/4 of the dough. Sprinkle with more flour to prevent sticking. Place another piece of parchment paper on dough, and roll out using a rolling pin to about 1/4-1/8 inch thick. Repeat with other dough balls. Stack on a baking sheet and freeze for 20 minutes.
- Preheat oven to 350 degrees. Remove dough, and using a fluted pastry wheel (or pizza cutter!) cut dough in to desired shape. I like cutting them to resemble store bought graham crackers, which are broken in two. You can also use your favorite cokie cutter as well.
- Transfer to a parchment lined baking sheet, and cook for a total of 9 minutes, rotating half way through to ensure even baking.
- Transfer to a wire cooling rack and allow to cool compeltely before serving, which allows them to crisp up a little more.
Jamie! Totally going to try your version of hommade graham crackers. I tried a recipe by King Arthur and it was all right but I would’ve made a few changes — yours definitely looks like the sweetness factor is there!
Hi Jen! I can’t wait to hear what you think! I love making my own graham crackers – they’re so delish! Enjoy! 🙂
