How To Hard Scramble Eggs

A hard scramble means eggs that have been whisked together and cooked until firm. This technique yields big, fluffy curds that are drier than they are wet. When you think of the style of eggs that are most typical of a classic American diner, you’re likely thinking about hard scrambled eggs!

Here’s how to make hard scrambled eggs:

  1. Combine eggs in a large glass bowl
  2. Season liberally with salt ad pepper (you can add more later!)
  3. Whisk eggs until light and frothy: you want to see bubbles!
  4. Heat a skillet with butter over medium-high heat
  5. Pour eggs into pan, stirring sporadically to break eggs up
  6. Cook until eggs hold together firmyl

How To Soft Scramble Eggs

Soft scrambling eggs has to be one of my favorite ways to enjoy the humble egg. Eggs are whisked and perfectly cooked to silky perfection. The curds are loose and slightly held together. So scrumptious!

Here’s how to make soft scrambled eggs:
  1. Combine eggs in a large glass bowl
  2. Season liberally with salt ad pepper (you can add more later!)
  3. Whisk eggs until light and frothy: you want to see bubbles!
  4. Heat a skillet with butter over low heat
  5. Pour eggs into pan, stirring consistently as the eggs cook
  6. Cook until eggs are slightly held together bt still appear slightly wet
