A hard scramble means eggs that have been whisked together and cooked until firm. This technique yields big, fluffy curds that are drier than they are wet. When you think of the style of eggs that are most typical of a classic American diner, you’re likely thinking about hard scrambled eggs!
Here’s how to make hard scrambled eggs:
- Combine eggs in a large glass bowl
- Season liberally with salt ad pepper (you can add more later!)
