Thanksgiving is right around the corner! I can hardly contain my excitement.
Everything about Thanksgiving is magical.
- The tradition.
- The time with family.
- The turkey.
- The cranberries.
- The green beans.
- The stuffingggggggg.
And of course, the mashed potatoes. Which in my family, is practically church itself.
But, this year, I think it’s time to lighten things up a bit.
Pssh. Scoff. Pff.
“THAT’S lightened up?!”, I assume you’re asking?
Why yes. Yes, it is.
See, rather than the starchy spuds my family is normally used to (loaded with sour cream, butter, and dare I admit – CREAM CHEESE), this is mashed CAULIFLOWER. It’s light. It’s creamy. It’s buttery.
And amidst all the heavy and highly caloric dishes you’re bound to enjoy on Thanksgiving, this is a welcome way to get in some extra veg, while still satisfying those mashed “potato” hankerings.
I totally just said “hankering”.
Sure, this mashed cauliflower has butter in it. But you don’t need much when you add roasted garlic and fresh thyme.

If I were you, I would at least triple this recipe. No joke, I ran out last time I had 4 grown potato-loving adults over for dinner. So take my warning seriously, yeah?!

Mashed Cauliflower with Roasted Garlic Butter
Ingredients
- 1 head Cauliflower
- 1/4 cup unsalted butter, room temperature
- 4 cloves roasted garlic
- 1 Tbsp fresh thyme
- 1 tsp salt
- 1/2 tsp Freshly cracked pepper
Instructions
- Add a small amount of water (no more than 1 cup) to a large stockpot.
- Add cut up cauliflower in a steamer basket set over the water. Steam until cauliflower is fork tender, about 15 minutes. Allow to slightly cool.
- Transfer cooled cauliflower to a food processor or blender, and blend until smooth.
- In a small bowl, mix butter and garlic together. Stir all but 1 tablespoon in to mashed cauliflower, allowing to melt. Add salt and thyme.
- Transfer to serving bowl, top with reserved butter, and garnish with sprigs of thyme.
