Mom's Chicken Ziti
My Mom's Chicken Ziti is so comforting, yet so light! Snappy and bright pea pods are combined with perfect cooked chicken, penne pasta, and the best homemade Alfredo sauce.
Ingredients
- 1 lb penne pasta
- 2 cups peapods
- 1.5-2 lbs chicken, poached, cut in to bite sized pieces
For the Alfredo Sauce:
- 1/2 cup butter
- 2 cups heavy cream
- 1 clove garlic, grated
- 2 cups parmesan cheese
- 1/2 tsp salt
- Pepper, to taste
Instructions
- Cook pasta according to package instructions. In the last 2 minutes of cooking, add the peapods to blanch. Drain and return to pan.
- Meanwhile, prepare the alfredo sauce. Melt butter in a medium saucepan set over medium-low heat. Once butter is melted, whisk in heavy cream. Constantly whisk until mixture thickens, about 5 minutes. Add in parmesan cheese, salt, and pepper. Stir until cheese is fully incorporated and sauce has thickened.
- Add poached and cubed chicken to pan of pasta and peapods. Pour alfredo sauce over mixture, and stir to combine. Serve warm!
