These PB Protein Energy Bites are simple, scrumptious, and the perfect post-workout or midday snack! They’re easy, healthy, and offer a boost of fast energy. This recipe is easily adjustable, and the ingredients can be catered to your liking.

But great news! I’m here to drop a little protein-bite-knowledge on ya. Sound good?
Ok, so the goods:
- Dry Ingredients: Oats, coconut, almond meal, coconut flour
- Liquid Ingredients: Honey, peanut butter, almond butter, maple syrup, agave
- Add-Ins: Flax meal, dates, raw almonds, pistachios, walnuts, protein powder, collagen powder
And so on, and so forth. SO many options, So many to try!
And while I highly encourage you to try any and all of the above ingredients to find the combination you love most, might I suggest you start with this straight forward and simple option? Promise you won’t regret it.
Follow the ratio I’ve started with:
- 2 1/2 cups dry ingredients
- 3/4 cup wet ingredients
- 1/4 cup “extras”
Depending on the amount of extras you add (i.e. protein or collagen powder versus nuts or dates), you may need to adjust the amounts of liquid ingredients you include.
Again, all the more reason to start with this recipe off the bat – and then make tweaks to find your favorite combination!
PB Protein Energy Bites
Ingredients
- 1/2 cup natural peanut butter
- 1/3 cup honey
- 1 1/2 cups Unsweetened shredded coconut
- 1 cup oats
- 1 scoop protein powder
- 1 Tbsp chia seeds
- Pinch sea salt
Instructions
- In a glass dish, combine peanut butter and honey. Microwave for 30 seconds, stir to combine. Continue microwaving for 15 second intervals until mixture is heated through and easily drips from spoon.
- Meanwhile, combine coconut, oats, protein powder, chia seeds, and salt. Pour honey and peanut butter mixture over oats mixture. Mix thoroughly to combine. Depending on the thickness of your peanut butter, you may need to add additional peanut butter or honey.
- Once thoroughly combined, use a 1 inch cookie scoop to form balls. Mixture may fall apart easily - gently form, and place on cookie sheet. Freeze until balls are firm, transfer to a container to store in refrigerator.
