This Farmer’s Market Bruschetta combines the best of the summer season! This toast includes marinated garlicky zucchini, juicy sweet tomatoes, oniony shallots, and the sweetest corn! All atop a healthy schmear of goat cheese, this appetizer is a simple summer favorite!

While I have a few seasonal favorites that I stick to in the kitchen this time of year, the truth is, sometimes it’s easy to almost have a little too much of a good thing.
Come on, you know what I mean. You suddenly realize you were a tad over zealous at the Farmer’s Market when you picked up that bushel of tomatoes.
And the 10 pounds of pickling cucumbers.
And a dozen ears of sweet corn.
Before you know it, your kitchen is practically busting at the seems with all this fresh ad delicious produce. But we all know what happens next…things start to go bad. I get it! There’s only so many Tomato Sandwiches that one can eat.
(Said no one ever, but I’ll let this one slide).
Enter: the Farmer’s Market Bruschetta. A beautiful little appetizer best served with great friends and chilled white wine.
The best part about this recipe is that you can make it your own!
- Picked up too many yellow squash and have no clue what to do with ’em? Here you go.
- Peppers for days? Throw ’em in!
- Over estimated your ability to eat 5 pounds of beets? Perfection, in this app.
One rule though: don’t skimp on the cheese! Goat cheese is my favorite in this rendition, but a creamy brie or pungent blue would be absolutely heavenly as well!

NOT to be confused with Texas Caviar, which is absolutely delicious in its own rite. This version combines all the ingredients used in the version shown above, but everything is diced in to tiny bite sized pieces, making it very scoopable (read: a hell of a lot easier to serve).

Farmer's Market Bruschetta
Ingredients
- 1 baguette, sliced and toasted
- 6 oz goat cheese
- 1 small zucchini think sliced
- 1 Tbsp olive oil
- 1 lemon juiced
- 2 cloves garlic minced
- 1-2 Tomatoes, sliced and halved
- 2 ears Sweet corn cut from the cob
- 1-2 small shallots, thinly sliced
- Basil to garnish
Instructions
- Marinate the zucchini: in a medium bowl, combine zucchini slices, olive oil, lemon juice, and garlic Season with salt and pepper to taste. Allow to sit and marinade for at least 20 minutes - though longer is preferrable!
- Meanwhile, prepare all the other veggies that you will be using for your bruschetta. Slice and halve the tomatoes. I like halving them because they fit on the baguette better. Slice the shallot, and cut the corn from the cob.
- When ready to serve, top toasted baguette slices with goat cheese, and arrange zucchini, tomato, shallot, and corn. Garnish with basil, freshly cracked pepper, flaky sea salt, and a drizzle of oil if you like.
