I know, I know. It’s a SALAD. But you know exactly what I’m talking about here, right?

So, I started to ponder how I could still enjoy Caesar Salad in a healthier way.
Enter, Grilled Zucchini Caesar.
Sure, all the usual suspects are here:
- Finely shredded romaine lettuce
- Toasty breadcrumbs
- A creamy, dreamy, salty dressing
- Cracked black pepper
- A whole buncha parmesan cheese
My dressing gets a healthy upgrade by way of greek yogurt. It still has all the normal Caesar Dressing ingredients (read: ANCHOVIES), so it tastes like the real deal. The greek yogurt gives it just a tad more tang, which I happen to love.

Ingredients
For the grilled zucchini:
- 2-3 small zucchini quartered lengthwise
- olive oil
- Salt and pepper
For the Caesar Dressing:
- 1/4 cup Greek yogurt
- 1/4 cup freshly grated parmesan cheese
- 2 Tbsp milk
- 1 Tbsp olive oil
- 1 Tbsp lemon juice
- 2 tsp anchovy paste
- 2 tsp Worcestershire sauce
- 1 clove garlic minced
- 1 Tsp dijon mustard
- Salt and pepper
To serve:
- 1/4 cup bread crumbs
- 1/2 romaine lettuce finely chopped
- Freshly cracked pepper
- freshly grated parmesan cheese for serving
Instructions
For the grilled zucchini:
- Set a grill pan over medium heat. Drizzle quartered zucchini with olive oil and sprinkle with salt and pepper. Grill zucchini spears in batches, until slightly charred.
For the Caesar Dressing:
- Whisk all ingredients in a small bowl until thoroughly combined. Taste, adjust anchor paste, salt and pepper, and lemon juice.
To serve:
- Place grilled zucchini on a platter. Drizzle with Caesar Dressing. Top with finely shredded romaine lettuce, freshly cracked pepper, and extra parmesan cheese.
