These Summer Tomato Sandwiches are by far one of my favorite summer recipes! This simple, healthy, open faced tomato sandwich is a delicious snack, appetizer, or mid-day meal.
There aren’t many things that make me as happy as a summer tomato sandwich.
Yes.
A TOMATO SANDWICH.
Every time I bring up this tasty summer snack, I’m met with awkward places of mistrust.
“A tomato sandwich?!”
“I don’t get it.”
“It can’t be THAT good.”
Oh yes, dear friends….yes it can.
Lessons in Tomato Sandwich Making: An Introduction
- Seek out ripest, heaviest, freshest tomatoes you can find. Pink tomatoes don’t exist here.
- Slice tomato thickly. IMPORTANT! Season liberally with large flake sea salt, at least 10 minutes prior to use.
- Toast grainiest, chewiest, healthiest bread you can find. Note: do not over-toast.
- Slather bread with vegan mayo. It just tastes better. Trust me.
- Top mayo-slathered-grainy bread with salted, juicy tomatoes. Top with fresh cracked pepper. Basil optional.
- Start salivating, and TRY to get by not making one more tomato sandwich.

Truly one of my favorite things about summer, right here you guys. As I mentioned above though – only the ripest, freshly-picked tomatoes will do. Which really limits your Tomato Sandwich making to about 2 solid months (if that!).
So, if there is any one lesson in this post you’re reading, it’s surely this:
Make a Tomato Sandwich every single day until you cannot any longer.
Summer Tomato Sandwich
Ingredients
- 2 slices whole grain bread
- 1 Tbsp Vegan Mayonnaise
- 2 small Tomatoes, (or 1 large)
- Maldon or large flake salt
- Freshly cracked black pepper
- Basil for serving, optional
Instructions
- Slice tomatoes, season liberally with large flake sea salt (do this at least 10 minutes prior to using tomatoes. This allows them to get extra juicy and flavorful).
- Meanwhile, toast bread lightly. Spread with vegan mayonnaise.
- Top with tomatoes, fresh cracked black pepper, and basil if desired.
