Roasting is a highly versatile and easy way to prepare large cuts of meat. Although it takes a little extra time and effort, the results from roasting are irreplaceable. Tender, fall-apart, and remarkably juicy: this technique is one to try your hand at!
How To Roast Meat
While cooking a piece of eat at low heat seems simple enough, the key to massive amounts of flavor in most cases is to sear it first. For roasts, follow the below instructions to get a great sear before slow roasting:
- Add vegetable oil to a large dutch oven pan over medium high heat.
- Season the meat with salt and pepper, and add roast to pan.
- Allow the meat to properly sear: don’t try to hastily move it to flip! Once the eat easily releases when you touch it, it’s ready to flip to the other side.
- Once the roast is browned on all sides and aromatics and any supplemental liquid is added, transfer the pan to the oven.
- Roast at a low temperature, typically 275 to 325 until the meat falls apart.
Alternatively, if you’re working with whole poultry, like chicken or turkey, getting “the sear” can be done by cooking it first at a very high temperature for a short amount of time (20-30 minutes), followed be a reduction in temperature to allow the meat to cook slower, thus resulting in juicer results.
