Blueberry Vanilla Bean Scones with Lemon Glaze 🫐🍋

I lived by myself in my early 20’s which was a profound experience in so many ways. My brownstone 1 bedroom was 2 blocks from Bde Maka Ska (THE lake to live by with a stunning view of the Minneapolis skyline), had a small galley kitchen equipped with checkered floors, floor to ceiling cabinets, & a jadeite sink, and a small wrought iron Juliet balcony just large enough to hold a few potted plants. It was perfect.

It was in this era of my life that the idea of starting a food blog began. Actually, it started as wanting to start my own baked goods company, with the eventual dream of opening a cupcake shop. I made cakes and cupcakes for friends, coworkers, family. Birthday parties, smash cakes, weddings, and just because. Although this idea didn’t come to fruition, it was also during this time that I spent all my free time in the kitchen: trying, testing, and tinkering with recipes, always finding an excuse to make something delicious.

Some of my fondest kitchen memories during this time were in the Spring, when I would make scones. I loved how simple scones were to make, and how a basic recipe truly became a blank canvas for any ingredient.

This version features the classic flavor combination of blueberry and lemon, but the end result is far from basic. These are NOT dry and crumbly, but delicate and tender thanks to the use of cake flour. They are my go-to scone recipe 🫶

When I need quality fish, I hit @coastalseafoodsmn. Bonus that I can also grab a few fav specialty ingredients like @maldonsalt (I grabbed the smoked version), and @omedoil (I’m drizzling the yuzu olive oil on everything from fish to ice cream). Not to mention the STELLAR cafe that serves up amazing fish and seafood dishes, but also apparently has a killer burger?! I’ll have to go back for that one, since I couldn’t resist a lobster roll🦞

Dinner at @flourhoboken. BYOB. Order everything on the menu. Especially the spicy-ish Caesar (still dreaming of this salad), beet carpaccio, and every pasta. Magical.

Bagels at @obagel_family. Why are they just better out east…

Coffee from @_mamannyc_ . The ambiance is alone worth the stop, but wait until you try their coffee and pastries.

Banana Pudding from @magnoliabakery . I have genuinely waited years to try this dessert… And it was worth the wait.

Lunch at @jackswifefreda. Everything we ordered was delicious, and if only I could’ve had one of their breakfast cocktails…
