Spicy and Creamy Sweet Corn Flatbread
This sweet, spicy, and creamy flatbread pizza is positively addicting. I’m not lying when I say the last few pieces of this were FOUGHT over in my house! Creamy and delicate ricotta and mozzarella cheese are combined atop a convenient store bought naan flatbread. It’s topped with bursting Minnesota sweet corn, spicy jalapeño slices, slivers of sharp red onion, and a tangy hot honey drizzle. It’s absolutely delicious!
How To Make Spicy and Creamy Sweet Corn Flatbread
Making your own flatbread pizza at home is wildly easy. There are two methods you can use to make these tasty slices:
- An Outdoor Grill: my cooking method of choice, cooking your flatbread on a gas or charcoal grill will give it delicate (or intense!)smoky flavor. The high heat mets the cheese and warms the ingredients quickly, which means your ‘za will take no time at all.
- Your Oven: a simple approach, especially if you’re without a grill or simply don’t have the energy to fire it up on a chilly winter day!
In addition to the two cooking methods, there are a number of different approaches you can take the it comes to your crust. Here are a few options to consider!
- Homemade Pizza Crust: Arguably the most delicious, homemade pizza crust is a lot simpler to make than you may think!
- Naan: Super simple and convenient, I love using these store bought Indian flatbreads pizza bases.
- Store Bought Pizza Crust: Whether you purchasestore bough fresh dough or a premadepizza crust ready to top, the convenience that comes with both is tough to beat!
Ingredients
- Naan Flatbread (homemade or store bought pizza cough or crust work great, too!)
- Ricotta Cheese
- Fresh Mozzarella Cheese
- Olive Oil
- Garlic
- Sweet Corn
- Jalapeno
- Red Onion
- Honey
- Apple Cider Vinegar
Method
- Preheat grill over medium high heat.
- Combine ricotta cheese, olive oil, salt, and garlic in a small bowl. Stir to combine.
- Add naan to grill, allowing to warm through.
- Remove from grill and spread with ricotta mixture. Top with mozzarella cheese, sweet corn, sliced jalapeños, and red onion.
- Return to grill and cook ubtil cheese has melted and ingredients are warmed through, about 5 minutes.
- Meanwhile, make the spicy honey. Combine jalapeño, honey, and apple cider vinegar in a small jar. Shake to combine.
- One pizza is done, remove from grill to a serving platter or board. Drizzle with spicy honey, slice, and enjoy!

Ingredients
- 1 naan flatbread, storebought (substitute for your favorite pizza dough if you like! My homemade version is linked in the recipe notes)
For the ricotta mixture:
- 1/2 cup ricotta cheese
- 1 tsp olive oil
- 1/2 tsp salt
- 1 clove garlic, passed through a microplane
To top the pizza:
- 1/2 cup fresh mozarella cheese, shredded (I recommend purchasing the ball of fresh mozzarella and shredding yourself. The flavor is so much better!)
- 3-4 slices fresh mozarella cheese (Purchase the pre sliced for ease!)
- 1 cup fresh corn, cooked
- 1 jalapeno, sliced
- 1/4 cup red onion, thinly sliced
For the spicy honey:
- 1 jalapeno, sliced
- 2 Tbsp honey
- 1/2-1 tsp apple cider vinegar
Instructions
