Skewers are a fabulous option to make when you have a group of people with varying tastes. They’re delicious for anyone, but people with picky palates will particularly appreciate them. Pick a variety of vegetables and protein, allowing everyone to thread their own skewer!
Tips For Making Skewers
Skewers are a simple meal to prep, however, there are a few considerations to make them as delicious and simple as possible:
- Soak the skewers. This will reduce burning if you’re using wooden skewers. Submerging them in water for about 20 minutes should do the trick!
- Marinate! This particularly holds true for your protein, but vegetables would do well with extra flavor, too!
- Cook like with like. The ingredients you use may require different cook times. Tomatoes and zucchini will cook faster than onions and potatoes. Assemble your skewers accordingly.
- Keep flipping! If you appreciate chard edges as much as I do, you want to keep moving the skewers to promote even cooking, as well as charring the edges consistently.

Spicy Grilled Shrimp Skewers with Pineapple

Ingredients
- 1 lb raw, tail-on shrimp
- 1 lime, juiced
- 2/3 cup olive oil, divided
- 1 tsp chili powder
- 1 tsp garlic powder
- 1/2 tsp cumin
- 1/2 tsp salt
- 1 yellow pepper, sliced into 1-inch wedges
- 1 red pepper, sliced into 1-inch wedges
- 1 green pepper, sliced into 1-inch wedges
- 2 cups fresh pineapple, sliced into 1 inch pieces
- 1 red onion, peeled and sliced into 1 inch chunks, being mindful to keep layers intact
- 4 jalapenos, sliced into 1/2 inch slices
- Cilantro, for serving
Instructions
- Combine lime juice and 1/3 cup olive oil with the spices in a large bowl. Add thawed shrimp and toss completely to combine. Cover with plastic or a plate to cover the bowl and place in the refrigerator for 30 minutes as you prep the other ingredients.
- If using wooden skewers, soak them for 20 minutes prior to grilling. This helps the skewers from getting too charred on the grill.
- Meanwhile, cut the peppers, red onion, pineapple, and jalapenos. Add to a large bowl and toss with remaining 1/3 cup olive oil.
- When shrimp is done marinating remove from the refrigerator. Alternating between marinated shrimp and vegetables, thread ingredients onto the skewers.
- Heat grill over medium heat (about 400º). Add skewers to the grill and cook, rotating regularly to promote even cooking and charring.
- Cook until vegetables are tender and shrimp are cooked through. Garnish with cilantro on a serving platter and serve!
