Green beans have to be one of my favorite vegetable sides. Truly! They’re simple, taste incredibly fresh, and have the ability to take on flavor while retaining their own. Perfection!
One of my favorite ways to enjoy them is in an uber lemony sauce. This recipe triples the lemon, showing up in the steaming liquid, the sauce, and as a garnish. If ever there were an ultimate lemony green beans recipe, this is it!
How To Make Lemony Green Beans
Making these green beans is a regular occurrence in my house. When I’m looking for an easy side that packs major flavor, this is it.
Steaming is a well-loved cooking method that retains the highest amount of nutrients compared to others. It takes next to no time (especially for green beans), is easy to add flavor, and is adjustable based on your desired tenderness.
Step 1: Flavor the Cooking Liquid
A great trick to infuse delicious flavor is by adding aromatics to the cooking liquid. I typically opt for water as the cooking liquid and will add in a splash of vinegar, aminos, or wine depending on the recipe. Lemon is tossed in adding wonderful lemony flavor.
Step 2: Steam JUST Long Enough
Be sure you don’t overcook your veg. You want to steam it just long enough that it still tastes as though it was just picked off the vine. Taste as you go, ensuring you’re cooking to your desired tenderness: this will be different for everyone, but I recommend starting with the designated time in the recipe to start with!
Step 3: Add Major Flavor

Lemony Green Beans
Ingredients
- 1 lb fresh green beans
- 2 lemons
- 3 Tbsp olive oil, garlic-infused recommended
- Maldon Sea Salt
Instructions
- Add water to the bottom of a medium sauce or saute pan (that fits a steamer basket). No need to add too much, about 1/4 inch up the side of your pan is plenty. Add half of one of the lemons, thinly sliced, to the water. Add your steamer basket.
- Wash the green beans, trimming their stems. Add to steamer basket. Steam for 5 minutes over medium heat, until fork tender (or until desired tenderness is met).
- As the green beans steam, prepare the lemon sauce. In a large bowl whisk together the juice of the other half of the lemon and your olive oil. I made this recipe with garlic-infused olive which turned out delicious! Add a pinch of salt and whisk until combined.
- Once green beans are done cooking, add them to the bowl with the lemon sauce. Toss lightly to combine. Transfer to a serving platter and top with thin slices of fresh lemon and sprinkle with Maldon Sea Salt, which offers the perfect, salty crunch.
