Sarah’s Salad

One of few lettuce salad “recipes” that’s revered in my family, this one is a favorite of many. It’s packed with juicy strawberries, tender spinach, crunchy romaine, and sharp red onion. It’s a simple recipe that anyone in the family could easily make (whether they offered to help or were coerced).

What really makes this salad special is the poppyseed dressing. My mom always made it in one of her working jars, and she only prepped it in massive quantities. There would always be leftover dressing, to be enjoyed at a later time (even if that meant later that night).

“Sarah’s Salad” is what it’s traditionally called. Who’s Sarah you’re probably wondering? I’d like to say that this salad originated from my cousin’s wife. She likely brought it to a family picnic, after which the salad was aptly given its name.

But I honestly can’t be sure.

A Modern Twist

While the main ingredients for this delicious Strawberry Poppyseed Salad haven’t changed, I’ve taken liberties to update the original recipe for the poppyseed dressing.

Like most poppyseed dressings, the OG recipe includes large quantities of ingredients that aren’t exactly known as being healthy: largely, mayo and sugar. While this recipe still includes mayo (nothing can quite accomplish its tangy creaminess!), I’ve scaled back the amount and filled in with one of my favorite ingredients for creamy dressings: greek yogurt. I also swap the sugar for honey, which still accomplishes the classic sweetness that comes with this scrumptious dressing.

What to Serve Strawberry Poppyseed Salad With

This sweet salad is perfect in the spring and summer when strawberries hit their peak. Farmers Markets and grocery stores will soon be brimming with the juicy jewels. Nothing quite beats the taste of a strawberry freshly picked off the vine (add strawberry picking to the Summer Bucket List)!

Strawberry Poppyseed Salad

Ingredients

  • 1 bunch romaine lettuce, about 3 cups
  • 2 cups spinach
  • 1/2 cup red onion, thinly sliced
  • 1 pint strawberries, hulled and sliced

For the Poppyseed Dressing

  • 1/2 cup greek yogurt
  • 2 Tbsp mayonnaise
  • 1 Tbsp honey
  • 1 Tbsp apple cider vinegar
  • Salt and freshly cracked pepper
  • 1 Tbsp Poppy seeds

Instructions

  • Add prepped ingredients to a large bowl. Drizzle with poppyseed dressing, tossing to combine.

For the Poppyseed Dressing

  • Combine all ingredients in a mason jar, shake thoroughyl to combine.
  • Add water is dressing is too thick to thin to desired consistency. Start with 1 teaspoon and increase from there!
