It happens every year: everyone gets their fill (and then some!) at Thanksgiving, and despite everyone’s best efforts…there is an enormous amount of leftovers. And while I’m not above making a complete replica of my Thanksgiving plate, sometimes reinventing the leftovers you have is more fun. Enter this delicious salad featuring Thanksgiving leftovers!
What To Put In A Thanksgiving Leftover Salad
The beauty of a dish like this is that it’s completely flexible. Grab your favorite crunchy green (or whatever is in the fridge!), and add those delicious leftovers:
- Turkey
- Wild Rice or another grain
- Roasted vegetables
- Cranberries
- Pickled items like olives, artichoke hearts, or beets
- Fresh fruit such as apples, pear, or orange segments
While this leftover Thanksgiving salad would be delicious with a series of leftover ingredients, the thing that really makes this salad exquisite is the dressing!
Here are the ingredients for this creamy and savory dressing that is so satisfying and flavorful:
- Tahini
- Coconut Aminos (or other soy substitute)
- Balsamic Vinegar
- Fresh Orange Juice
- Fresh Lemon Juice
- Dijon Mustard
- Garlic

The Perfect Thanksgiving Leftover Salad
Ingredients
- 2 cups arugula
- 1/4 cup cooked wild rice
- 1/4 cup roasted sweet potatoes
- 1/2 cup cooked turkey breast, torn into bite sized pieces
- 2 tsp green onions, chopped
- 1 Tbsp sunflower nuts
For the dressing:
- 1 1/2 tsp tahini
- 1 1/2 tsp fresh squeezed orange juice
- 1 tsp aminos, soy sauce ,or other soy alternative
- 1 tsp fresh squeezed lemon juice
- 1 tsp balsamic vinegar
- 1/4 tsp dijon mustard
- 1/2 clove minced garlic
- Salt and pepper
Instructions
- Add arugula to a serving bowl or plate. Top with wild rice, roasted sweet potato, turkey, green onion, and sunflower seeds.
- Combine ingredients for the dressing in a small mason jar. Note that you can scale this recipe if you want to make more! Shake thoroughly until the ingredients are combined. Taste the dressing and adjust the seasoning as needed.
- Drizzle salad with dressing, toss, and enjoy!
