Tofu & Shiitake Lettuce Wraps with Perfect Peanut Sauce
These Tofu & Shiitake Lettuce Wraps with Perfect Peanut Sauce are a delicious and healthy appetizer! The Peanut Sauce is the perfect balance of umami flavors.
Servings: 4 servings
Ingredients
For the Tofu & Shiitake mix:
- 1 block firm tofu, drained and cut in to small bite-sized cubes
- 10-12 dired shiitake mushrooms, see note
- 1/2 yellow onion chopped
- 1 Tbsp sesame oil
For the Perfect Peanut Sauce:
- 1/2 cup peanut butter
- 2 Tbsp Aminos
- 1/2 cup green onions, chopped
- 2 Tbsp sesame oil
- 1 Tbsp freshly grated ginger
- 1 Tbsp maple syrup
- 2 Tbsp water adjust to your desired consistency
To Serve:
- 1 head Bibb Lettuce
- Toasted sesame seeds for serving
- Sriracha for serving
- Fresh lime wedges, for serving
Instructions
- In a deep skillet set over medium heat, add sesame oil.
- Add tofu and onion to pan and saute, 3 minutes. Add mushrooms and allow to saute until mushrooms release liquid. Continue sautéing to reduce any liquid, until mixture is no longer wet.
- Meanwhile, make the peanut sauce. Combine all ingredients except green onions in small sauce pan. Slowly bring to a light simmer, stirring sporadically until peanut butter is completely melted and sauce is thoroughly combined. Remove from heat and allow to slightly cool, adding green onions right before ready to serve.
- Spoon tofu and shiitake mixture in to Bibb lettuce leaves, drizzle with warm sauce, and top with sriracha, toasted sesame seeds, and serve with lime wedges.

Notes:
- Rehydrate dried shiitakes by placing them in a bowl of hot water for at least 10 minutes. Remove stems if necessary, squeeze excess water and slice in the uniform pieces, similar in size to the tofu.
