- 1 3/4 cups flour
- 3 Tbsp sugar
- 2 1/4 tsp baking powder
- 2 1/4 tsp baking soda
- 1/2 tsp salt
- 2 eggs , lightly beaten
- 2 cups buttermilk
- 2 Tbsp oil
- 1 pint blueberries
Sift all of the dry ingredients together in a large bowl.
In a glass measuring cup or separate smaller bowl, lightly whisk eggs and add buttermilk and oil.
Add to dry ingredients, using a spatula to stir lightly until just combined. Add 1 cup of blueberries, folding in carefully but not over mixing.
Set a large flat saute pan or cooking surface over medium heat. Using a 1/3 cup measuring cup, scoop batter on to pan, take care to not allow each pancake to touch.
Allow to cook until bubbles appear on top of the pancake. Gently flip each pancake and allow to cook until golden brown on both sides. Complete with remaining batter.
Serve pancakes with butter and warmed pure maple syrup .
