Ingredients

  • 1 3/4 cups flour
  • 3 Tbsp sugar
  • 2 1/4 tsp baking powder
  • 2 1/4 tsp baking soda
  • 1/2 tsp salt
  • 2 eggs , lightly beaten
  • 2 cups buttermilk
  • 2 Tbsp oil
  • 1 pint blueberries

Instructions

  • Sift all of the dry ingredients together in a large bowl.
  • In a glass measuring cup or separate smaller bowl, lightly whisk eggs and add buttermilk and oil.
  • Add to dry ingredients, using a spatula to stir lightly until just combined. Add 1 cup of blueberries, folding in carefully but not over mixing.
  • Set a large flat saute pan or cooking surface over medium heat. Using a 1/3 cup measuring cup, scoop batter on to pan, take care to not allow each pancake to touch.
  • Allow to cook until bubbles appear on top of the pancake. Gently flip each pancake and allow to cook until golden brown on both sides. Complete with remaining batter.
  • Serve pancakes with butter and warmed pure maple syrup .
