Báhn Mì Bowls

These Báhn Mì Bowls are packed with bright and fresh flavors! Shredded pork is combined with fresh herbs, cucumber, red onion, and pickled carrots and radishes in this mouthwatering combination.

Ingredients

  • 2 cups shredded pork, see recipe notes for the link to my Instant Pot Shredded Pork
  • 1 1/2 cups sliced cucumber
  • 1/2 cup thinly sliced red onion,
  • 1/2 cup cilantro leaves
  • 1/4 cup fresh mint leaves
  • Thinly sliced jalapeño
  • Rice for serving

For the pickled carrots and watermelon radish:

  • 1 carrot, thinly sliced
  • 1/2 watermelon radish, peeled, thinly sliced, and cut in to quarters
  • 1/3 cup distilled white vinegar
  • 1/2 tsp sugar
  • Water

For the spicy mayo:

  • 2 Tbsp mayonnaise
  • 2 tsp Sriracha

Instructions

For the pickled carrots and watermelon radish:

  • In a small lidded glass jar, combine sliced carrots, watermelon radish, sugar, and vinegar. Top off with water. Place the cap on the jar and shake to combine. Pickles should be ready within 30 minutes, but the longer they sit, the more flavorful they'll be.

To assemble:

  • Arrange the shredded pork, sliced cucumber, red onion, fresh herbs, red onion, pickled carrots and watermelon radish, and rice in a bowl.

For the spicy mayo:

  • Combine mayonnaise and sriracha, stirring to combine. Drizzle over bowl and enjoy!
