One Flavorful Bowl

As I’ve shared many times before on my blog, I love eating meals that are bowls. Burrito Bowls, Mediterranean Bowls, Grain Bowls...what’s not to like? Everyone gets to handpick their favorite ingredients, drizzle their favorite sauces, and remain completely content in the fact that their dinner looks far different from everyone else’s. It’s personalization at its finest!

These Báhn Mì Bowls are no exception! Packed with incredible flavors, these bowls are a twist on the classic Vietnamese sandwich. Read on to learn how I bring all the deliciousness from this traditional dish into the bowl.

What Is A Báhn Mì?

The first question to address is precisely what a Báhn Mì Sandwich is. It’s a Vietnamese sandwich which traditionally includes some combination of the following ingredients:

  • Pork Sausage
  • Cucumbers
  • Cilantro
  • Pickled Carrots and Daikon Radish
  • Spicy Mayo 
  • French Baguette

It’s a mouthwatering combination of salty, fresh, and spicy flavors. The pickled carrot and radish add a briny bite, while the fresh cucumber and cilantro add bright crisp. 

How To Make Báhn Mì Bowls

In bowl form, the Báhn Mì needs a grain to bring it all together. I like using a brown rice and quinoa mix in mine, but white rice, brown rice, cauliflower rice, quinoa, or barley would be excellent options, too. 

The pork is represented in this recipe by my Instant Pot Shredded Pork which is unbeatable simple to make! In my article, I share multiple recipes to consider making with the leftovers (these Báhn Mì Bowls being one of them!). 

While the pickle component of a traditional Báhn Mì includes carrots and daikon radish, I thought a watermelon radish would be a beautiful addition, which I was right about! If you want to lean toward more of the traditional preparation, feel free to substitute daikon radish for the watermelon. 

Fresh cucumber, mint, cilantro, and jalapeño add lush green color to the dish, which is a feast for the eyes as much as it is for the appetite. These fresh flavors cut through the fat in the pork and the spicy mayo which is drizzled on top of the dish.

Báhn Mì Bowls

These Báhn Mì Bowls are packed with bright and fresh flavors! Shredded pork is combined with fresh herbs, cucumber, red onion, and pickled carrots and radishes in this mouthwatering combination.

Ingredients

  • 2 cups shredded pork, see recipe notes for the link to my Instant Pot Shredded Pork
  • 1 1/2 cups sliced cucumber
  • 1/2 cup thinly sliced red onion,
  • 1/2 cup cilantro leaves
  • 1/4 cup fresh mint leaves
  • Thinly sliced jalapeño
  • Rice for serving

For the pickled carrots and watermelon radish:

  • 1 carrot, thinly sliced
  • 1/2 watermelon radish, peeled, thinly sliced, and cut in to quarters
  • 1/3 cup distilled white vinegar
  • 1/2 tsp sugar
  • Water

For the spicy mayo:

  • 2 Tbsp mayonnaise
  • 2 tsp Sriracha

Instructions

For the pickled carrots and watermelon radish:

  • In a small lidded glass jar, combine sliced carrots, watermelon radish, sugar, and vinegar. Top off with water. Place the cap on the jar and shake to combine. Pickles should be ready within 30 minutes, but the longer they sit, the more flavorful they'll be.

To assemble:

  • Arrange the shredded pork, sliced cucumber, red onion, fresh herbs, red onion, pickled carrots and watermelon radish, and rice in a bowl.

For the spicy mayo:

  • Combine mayonnaise and sriracha, stirring to combine. Drizzle over bowl and enjoy!
