Pineapple and Dragonfruit Paletas

These Pineapple and Dragonfruit Paletas are tart, sweet, and so fun! These fruit ice pops are just the thing for a hot day. They’re delicious on their own or served with a shot of your favorite clear spirit!

Ingredients

  • 1 cup frozen dragon fruit
  • 1 cup fresh pineapple
  • 2 Tbsp sugar, divided
  • 1 lime, juiced

Instructions

  • In a blender combine dragon fruit with 1 tablespoon of sugar. Halve the lime, and squeeze one half into the blender. Pulse for about 15 seconds, adding a tablespoon of water if needed to thin the mixture out. Transfer to a glass measuring cup (this helps with easy pouring!).
  • Rinse out the blender and add pineapple. Add 1 tablespoon of pineapple and the other half of the lime juice. Process until smooth, again adding water if needed to thin the mixture out.
  • Layer the two mixtures in ice pop molds, or you can use paper cups instead. Add popsicle sticks and freeze until solid.

To Make a cocktail:

  • Add a shot of your favorite spirit to a low ball glass. Serve paleta inverted into the glass, allowing it to melt into your drink.
