A Cool & Tropical Treat

When it gets hot out, there’s really just one answer: cool treats! Ice cream cones, shakes, or something on a stick: it’s all delicious and worthy of a hot day. 

When it’s hot though, the last thing I want is a stomach ache. Which, admittedly, ice cream normally gives me. That said, something light, fruity, and tart is in order…something that will quench our thirst as much as it will our desire for something sweet. 

I’m going to show you how to make Pineapple and Dragonfruit Paletas: arguably the only thing I’ll be craving this summer. Read on to learn how to make these delicious ice pops!

What Are Paletas?

Paletas are simply Mexican popsicles. The flavors are regularly comprised of fresh fruits, yielding juicy and delicious results. They include very basic ingredients and can be made in disposable paper cups if you don’t have popsicle molds. What are you waiting for?!

How To Make Pineapple and Dragonfruit Paletas

Pineapple and dragonfruit are two incredibly complementary flavors. Pineapple is both sweet and tart depending on the ripeness of the pineapple. Dragonfruit is a more exotic fruit that is normally a bit tart. I’ve found fresh dragonfruit in some local grocers, but it’s easier to find in the frozen section. 

Making paletas couldn’t be easier. You’ll combine your desired ingredients with a small amount of sugar (depending on how sweet your fruit is), and lime juice. You’ll then layer your mixtures into ice pop molds (or as preciously mentioned paper cups!), stick in a wooden popsicle stick, and voila! Paletas!

How To Spike Your Paletas

I’m all about cool sweet treats when it gets steamy out, but I’m also a lover of a good cocktail. So why not combine these two lovely things?!

A fun way to serve these paletas is to serve them in a glass with a shot of your favorite clear liquor. White rum, tequila, gin, or vodka: they all make wonderful options! As the popsicle melts, it’s sweetening(and chilling!) your alcohol. Additionally, every time you take a lick of your paleta…OOOH-WEE! What fun!

Pineapple and Dragonfruit Paletas

Equipment

  • Ice Pop Molds

Ingredients

  • 1 cup frozen dragon fruit
  • 1 cup fresh pineapple
  • 2 Tbsp sugar, divided
  • 1 lime, juiced

Instructions

  • In a blender combine dragon fruit with 1 tablespoon of sugar. Halve the lime, and squeeze one half into the blender. Pulse for about 15 seconds, adding a tablespoon of water if needed to thin the mixture out. Transfer to a glass measuring cup (this helps with easy pouring!).
  • Rinse out the blender and add pineapple. Add 1 tablespoon of pineapple and the other half of the lime juice. Process until smooth, again adding water if needed to thin the mixture out.
  • Layer the two mixtures in ice pop molds, or you can use paper cups instead. Add popsicle sticks and freeze until solid.

To Make a cocktail:

  • Add a shot of your favorite spirit to a low ball glass. Serve paleta inverted into the glass, allowing it to melt into your drink.
