Quinoa Tabbouleh
This Quinoa Tabbouleh is a hearty and filling vegetarian salad! Quinoa, cucumber, tomato, and lots of herbs are tossed in a delicious lemony dressing.

- 2 Cups Cooked quinoa
- 1 Cup parsley Chopped
- 1/2 Cup Mint, Chopped
- 3 Tomatoes, Seeded and chopped
- 1/2 Cup Green onion, Chopped
- Juice of 1 lemon
Mix cooked quinoa, chopped parsley and mint, green onions, and seeded and chopped tomatoes.
Toss to combine, adding juice from one lemon, along with olive oil, salt, and pepper to taste.
-This makes a great side salad to accompany grilled steak.
