Smoked Trout Bites

These Smoked Trout Bites are savory little puffs full of delicious smoked trout. The addition of bright dill are the perfect compliment to these light bites. They make a perfect appetizer or snack!

Ingredients

  • 1/2 cup water
  • 1/2 cup Greek yogurt
  • 1 stick unsalted butter,
  • 1 1/4 cups flour
  • 1 tsp salt
  • Freshly cracked pepper
  • 6 eggs
  • 1 lb. Smoked trout, skin and bones removed, meat flaked
  • 3 Tbsp fresh dill

Instructions

  • Preheat oven to 400 degrees. Bring water to simmer in saucepan. Add greek yogurt and butter. Reduce heat and add flour, salt, and pepper. Stir completely to combine.
  • Remove from heat. Add eggs, one at a time, incorporating each one in to the dough before adding the next. Dough may appear as if it's separating - keep stirring!
  • Fold in flaked trout and dill carefully. Stir until just combined.
  • Using an ice cream scoop, scoop dough on to a parchment-lined baking sheet. Bake for 20-25 minutes, ensuring you're watching closely. Tops should be golden brown.
  • Serve warm, preferably with something chilled, dry, and alcoholic. Cheers!
