It’s almost THANKSGIVING! And we all know what that means.
  • Turkey thawing.
  • Potato peeling.
  • Pie baking.
  • Ingredient scavenging.
  • Wine buying.

All the activities centering around one beautifully glorious day: Thanksgiving.

I love Thanksgiving. For the past 8 (ish?) years, my sister Leah and our two lifelong friends, Morgan and Leah, have ran the Turkey Day 5k in Minneapolis. It’s become such a fun tradition, and something I look forward to every year.

Sure, we have to wake up on Thanksgiving Day around 6:00 a.m.

When the sun’s not out, and it’s typically ~22 degrees outside.

And put on running gear.

And wait outside, downtown Minneapolis, surrounded by thousands of people, with not enough coffee, to commence a race.

Ok….stay with me.

But then we start running. We catch up. We site see. We laugh. We talk about what we’re making for our big meals that day, and what we’re looking forward to getting seconds of. And then I realize….just how thankful I am – for everyone, and everyTHING around me.

  1. My friends.
  2. My family.
  3. My husband.
  4. My health.
  5. My freedom.
  6. My….second pair of gloves I wore.

None the less, this tradition has become one of my favorite that kicks of a magical season of gratitude, loved ones, and all things delicious.

And, if you’re anything like me, and decide to workout the morning of Thanksgiving (a well-deserved high five to YOU!), you’ll need a little something to tide you over until the big meal.

Or….just be sure you save enough room for pie, yeah?

Best served with a light and crisp rosé, or a super dry Riesling, your guests will happily accept this little nibble and refreshment in preparation for….um…well, more eating and more drinking.

Smoked Trout Bites

These Smoked Trout Bites are savory little puffs full of delicious smoked trout. The addition of bright dill are the perfect compliment to these light bites. They make a perfect appetizer or snack!

Servings: 4 servings

Ingredients

  • 1/2 cup water
  • 1/2 cup Greek yogurt
  • 1 stick unsalted butter,
  • 1 1/4 cups flour
  • 1 tsp salt
  • Freshly cracked pepper
  • 6 eggs
  • 1 lb. Smoked trout, skin and bones removed, meat flaked
  • 3 Tbsp fresh dill

Instructions

  • Preheat oven to 400 degrees. Bring water to simmer in saucepan. Add greek yogurt and butter. Reduce heat and add flour, salt, and pepper. Stir completely to combine.
  • Remove from heat. Add eggs, one at a time, incorporating each one in to the dough before adding the next. Dough may appear as if it's separating - keep stirring!
  • Fold in flaked trout and dill carefully. Stir until just combined.
  • Using an ice cream scoop, scoop dough on to a parchment-lined baking sheet. Bake for 20-25 minutes, ensuring you're watching closely. Tops should be golden brown.
  • Serve warm, preferably with something chilled, dry, and alcoholic. Cheers!
