- 1 1/2 cups very ripe mashed banana, from about 4 bananas
- 2 eggs, lightly beaten
- 1/2 cup neutral oil, like vegetable
- 1/2 cup sugar
- 1/2 cup pure maple syrup
- 1 tsp vanilla extract
- 2 cups flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
Preheat oven to 350 degrees.
Grease a loaf pan with butter or oil. Place a piece of parchment paper in the pan with the edges hanging over (cut the parchment to fit - this helps for easy lifting out of the pan once the bread is baked).
In the bowl of a stand mixer or a mixing bowl, combine banana, eggs, oil, sugar maple syrup, and vanilla. Mix until all ingredients are incorporated.
Combine flour, baking powder, baking soda, spices, and salt in a separate bowl, mixing to combine. Add dry ingredients to wet, mixing until just combined.
Pour batter into prepared baking dish and bake for 55-60 minutes, or until top of bread is golden bread and a toothpick or cake tester comes out clean. Serve warm!
