Triple Coconut Granola

- 3 cups oats
- 1/4 cup sunflower seeds
- 1/2 cup walnuts
- 1/2 cup sliced almonds
- 1/4 cup dessicated coconut
- 1/3 cup pure maple syrup
- 1/4 cup coconut oil
- 1 tsp vanilla extract
- 1 1/2 cups coconut chips
Mix oats, sunflowers seeds, walnuts, sliced almonds, and dessciated coconut together in a large bowl.
Melt maple syrup and coconut oil together. Once melted, add vanilla extract.
Pour liquid over dry ingredients, and toss to combine.
Bake on parchment lined baking sheet at 325 degrees for 10 minutes. Remove from the oven and toss the mixture. Return to oven for 5 more minutes, watching closely to ensure it doesn't burn.
Remove from the oven and add the coconut chips, tossing to completely combine. Allow the mixture to cool in its pan, or if it browned too quickly, spread out over parchment paper to cool.
Store in a lidded glass container for up to 3 weeks.
