If I had it my way, I would be at the cabin every weekend. Coffee on the porch, lazy pontoon rides, unlimited games of Cribbage and Solitaire, long walks, yard games, designated cocktails depending on the time of day, bonfires, dry martinis, and cranking the “Crooners” playlist across the lake.

Oh, and the food. Let’s not forget that.

Being the planner that I am, there’s a high level of strategy that goes into eating at the cabin. Regardless of the meal, at least one part will have been prepared in advance or planned on. Pasta salads, breakfast bakes, roasted potatoes (they can be sliced and prepped, you know…), cookies, trail mixes, or a batch of hummus. Basically, every minute of the day – I’m preparing to have something on hand to munch on.

This Triple Coconut Granola is one of my favorite things to prep for simple and light breakfasts at the cabin. Read on to learn more about this yummy granola that I always like to have on hand.

How To Make Triple Coconut Granola

This granola is perfect sprinkled over yogurt, served over almond milk, or straight munched on by the handful. However you eat it, I guarantee you’ll grab an extra spoon/handful. This granola includes:

  1. Shredded coconut
  2. Coconut oil
  3. Coconut chips

It’s combined with oats, nuts, maple syrup, and vanilla and baked until it’s toasty and crisp. I find that this granola lasts for about 3 weeks until it starts getting a little soggy, although this depends on the vessel you’re storing it in. Also, good luck having it last 3 weeks! Normally a batch of this Triple Coconut Granola lasts 5 days in my house!

Ways To Enjoy Triple Coconut Granola

Although it’s delicious nibbled straight from the palm of your hand, there are a few tasty ways to enjoy this crunchy granola:

  • Sprinkled over a bowl of your favorite yogurt with fresh berries
  • Served with a splash of almond milk
  • On top of a bowl of ice cream (here are a lot of delicious recipes to consider if you’re up for making your own! The Amaretto Ice Cream with Mixed berries is sinfully simple!).

Triple Coconut Granola

This Triple Coconut Granola is a delicious, healthy, and simple recipe! Shredded coconut, coconut oil, and coconut chips make this granola outrageously yummy.

Ingredients

  • 3 cups oats
  • 1/4 cup sunflower seeds
  • 1/2 cup walnuts
  • 1/2 cup sliced almonds
  • 1/4 cup dessicated coconut
  • 1/3 cup pure maple syrup
  • 1/4 cup coconut oil
  • 1 tsp vanilla extract
  • 1 1/2 cups coconut chips

Instructions

  • Mix oats, sunflowers seeds, walnuts, sliced almonds, and dessciated coconut together in a large bowl.
  • Melt maple syrup and coconut oil together. Once melted, add vanilla extract.
  • Pour liquid over dry ingredients, and toss to combine.
  • Bake on parchment lined baking sheet at 325 degrees for 10 minutes. Remove from the oven and toss the mixture. Return to oven for 5 more minutes, watching closely to ensure it doesn't burn.
  • Remove from the oven and add the coconut chips, tossing to completely combine. Allow the mixture to cool in its pan, or if it browned too quickly, spread out over parchment paper to cool.
  • Store in a lidded glass container for up to 3 weeks.
