My mom’s favorite dessert in the world is banana cream pie. Regardless of the time of year or occasion, if given the choice – she will always reach for or request this delicious dessert.

When I think of bananas, like most – I think of breakfast. Even on the busiest mornings, it’s easy to grab one on your way out the door. Oh, you have more time in the morning than I do? Great – top your french toast or pancakes with em’, blend them in to your favorite smoothie, slice and put on your cereal, or some PB toast. Whatever your morning style is, the banana hails supreme as the easiest breakfast fruit.

HOLY BANANAS. Or, holy Banana-Coconut-Cream-Pie-Overnight-Oats, should I say. These oats are UNREAL! And so easy. Pulling the ingredients together literally takes less than 3 minutes.

Come morning time, you just add some banana, and top with MORE banana and coconut. NOM!

I used a mixture of canned coconut milk, as well as a coconut and almond milk blend – which my mom is obsessed with. Most grocery stores have this near the other almond milks – but use your favorite 🙂

Banana Coconut Cream Pie Overnight Oats

These Banana Coconut Cream Pie Overnight Oats are a super delicious weekday breakfast. They can be prepared in advance, so all you need to grab is the jar and a spoon on your way out the door. They're made with gluten-free oats, coconut and almond milk, and topped with banana coins and shredded coconut!

Ingredients

  • 1/2 cup gluten free oats
  • 1/3 cup canned coconut milk
  • 1/3 cup almond coconut milk
  • 1 Tbsp Unsweetened shredded coconut
  • 1 tsp honey
  • Splash of vanilla
  • 1 banana, sliced
  • Unsweetened shredded coconut for serving

Instructions

  • In a mason jar or container with lid, combine the oats, milks, coconut, honey, and vanilla.
  • Refrigerate overnight.
  • When ready to enjoy, chop half of the banana and mix in to oat mixture.
  • Slice the remaining half of banana, and top oats with coconut.

Notes

-I enjoy my overnight oats cold, but feel free to heat up for a warm breakfast. I would add the banana after you heat  them, though.
-I used both raw desiccated coconut, along with toasted coconut chips to top my oats.
