Now, I’m sure you’ve seen a number of these 2 Ingredient Banana Pancakes on Pinterest, the Gram, Blog Lovin’, or whatever other social media you use for recipe inspo. Maybe you’re like me and have thought, “Hmmm….I think I’ll just go for something a little more ‘normal’…” (i.e. familiar).
- What’s the texture going to be like?
- How long will they take to cook?
- Will they even taste good?
I’m here to bust all those myths for you, and convince you to try this uber easy pancake recipe NOW.
First Question: Texture
The trick here is to be sure you cook the pancakes long enough. If you don’t, rest assured, they will have a weird, spongy texture that isn’t exactly appetizing (unless you’re in to that). That’s why my pancakes maybe look a tad overdone. But they’re not! That isn’t a sign of burning….it’s the banana caramelizing. And any breakfast that has the the word caramelized describing it is just fine in my book.
Second Question: Cook Time
This pancake takes a little more time than your average Saturday morning flapjacks. While the pancake is cooking (the time intensive part), you can prep fruit to top your pancakes with, make some eggs, start a pot of coffee, read the newspaper, cruise Pinterest…. whatever you like! Just stay close by so you can flip the pancake when it’s ready.
Third Question: Taste
Bananas and eggs….I know it sounds a bit weird. But again, I revisit caramelization. The trick is to use a very ripe banana, which naturally has more sugar. Standing alone, these pancakes are divine. But when you start adding toppings, it gets a little out-of-control-delicious. I kept mine simple with strawberries, extra banana, and pure maple syrup. But thing about the other options:
- almond butter + coconut
- peanut butter + chocolate chips
- raspberries + whipped coconut cream
- peaches + blueberries

2 Ingredient Banana Pancakes
Ingredients
- 1 banana, very ripe preferred
- 2 eggs
Instructions
- Heat an 8 inch non-stick skillet over high heat. Spray with coconut oil.
- In a medium bowl, mash the banana.
- In separate bowl, whisk eggs until frothy.
- Pour eggs over banana, mix thoroughly to combine.
- Pour mixture in to hot skillet, allow to cook for 5 minutes.
- Turn heat down, and continue to monitor. Flip when pancake is cooked through on bottom half.
- Cook until both sides of pancake are a caramelized brown.
- Top with favorite fruit, maple syrup, apple sauce, nut butter, or simple enjoy on its own!
