In anticipation of this delicious and nutritious Butternut Banana Collagen Glow Bowl, I posted a little Instagram story about it.

The Toppings

This Butternut Banana Collagen Glow Bowl has banana coins, unsweetened coconut, pepitas, and on of my favorite wholesome snacks: an Ommie Bar.

These bars are made locally here in Minnesota, and include nutritious, clean, and beautiful ingredients. They’re perfect on their own (I love grabbing one before a workout to give me energy), and they add extra deliciousness to a smoothie bowl like this.

I MEAN COME ON RIGHT?! A perfect little bite in every spoonful.

I love making smoothie bowls like this on the weekend or when I have the opportunity to work from home during the week. Eating a smoothie like this is such a wonderful way to remind yourself to slow down, enjoy what’s on your plate, and appreciate what it’s doing for your body.

This bowl includes my favorite protein powder, Vital Proteins Collagen Peptides.

My freezer is always stocked with Smoothie Packs. First, I’ll prep my ingredients (specifically bananas when they start to get too ripe!), then throw them in plastic bags, and then they go in the freezer! Freezing all your ingredients ensures a nice creamy result when you blend it all up with almond milk.

I love using different ingredients in my smoothies, too! As mentioned above, bananas are a must in every smoothie I make. But I’ve recently been throwing in frozen avocado, cauliflower, and as showcased here…..butternut squash.

The cinnamon gives it a little additional warmth, which is so enveloping and delicious.

Butternut Banana Collagen Glow Bowl

This Butternut Banana Protein Bowl is healthy, delicious, and so simple! Add your favorite protein (mine includes collagen!) for an extra healthy boost. Add your favorite toppings such as coconut, nuts, seeds, and fruit. Delicious eaten with a spoon or a straw!

Ingredients

For smoothie bowl:

  • 1/2 banana, sliced and frozen
  • 1/3 cup roasted butternut squash, frozen (see note)
  • 1 cup almond milk
  • 3/4 tsp cinnamon
  • 2 scoops Your favorite protein powder, (See notes)

For topping:

  • 1 Tbsp Unsweetened coconut
  • 1 tsp raw pepitas
  • Banana coins
  • Favorite raw food bar, (see notes)

Instructions

  • Add all smoothie bowl ingredients to your blender, and process until smooth.
  • Pour in to a bowl, and top with your favorite toppings. Enjoy!

Notes

For the butternut squash:
  • I prepped a whole butternut squash in a couple of ways for different uses:
    • Cubed, tossed with olive oil, salt, and pepper - to throw in salads, toss with grains for a side, or puree in to a soup
    • Cubed, tossed with coconut oil - To cool completely, divvy up in plastic bags with other smoothie ingredients= Smoothie Packs!
