Ingredients

  • 4 spinach tortillas
  • 2 cups shredded cheddar cheese (slices may be used instead, if preferred)
  • seasoned Greek yogurt dip (recipe below)

For the Seasoned Greek Yogurt Dip

  • 2 cups Greek yogurt
  • 1 tsp Garlic Powder
  • 1 tsp paprika
  • 1/2 - 3/4 tsp salt
  • 1/2 tsp fresh lemon juice (from about ¼ of a lemon)
  • 1/4 tsp cracked black pepper

Instructions

  • Preheat oven to 350 degrees.
  • Place spinach tortilla on baking sheet. Top with cheddar, placing an additional spinach tortilla on top.
  • Bake for about 5 minutes, until cheese is melted through, remove from oven.
  • Allow to cool slightly. Using a shamrock cookie cutter, cut out shapes and set aside. Serve with seasoned greek yogurt dip.

For the Seasoned Greek Yogurt Dip

  • Combine all ingredients in a medium bowl, mixing thoroughly to combine. Best when made at least 30 minutes in advance, so flavors can meld.
