A Sweet Treat For Your Sweetie

Chocolate covered strawberries, are arguably synonymous with Valentine’s Day. The classic, sweetheart treats is transformed in these delicious truffles! White chocolate and freeze dried strawberries make up the interior of these luscious candies, which are coded in a rich, dark chocolate coating. Ingredients for Chocolate Covered Strawberry Truffles

  • White Chocolate
  • Freeze Dried Strawberries
  • Heavy Cream
  • Vanilla Extract
  • Dark and white chocolate melting wafer
  • Sprinkles!

How To Make Chocolate Covered Strawberry Truffles

  1. Process the freeze-dried strabwerries until a powder forms. It’s ok if a few larger pieces remain – they’ll be delicious!
  2. Add white chocolate to a medium bowl. Heat the cream in a small saucepan set over medium heat (you can microwave it, too). Watch it carefully though – this is not a lot of cream, so it will heat quickly! Pour the cream over the white chocolate, allowing the chocolate to melt.
  3. Add the vanilla and the strawberry powder to the chocolate. Stir to combine and completely melt the chocolate.
  4. Cover with plastic and refrigerate 2 hours, or until the mixture is set, firm, and gives some resistance when you try to scoop it.
  5. Once the mixture is ready, use a cookie scoop or spoon and roll mixture into balls.
  6. Melt both dark and white chocolate wafers in separate bowls. Dip each ball into the chocolates, and drizzle with the different chocolate, to create contrast. Top with sprinkles quickly – the candy coating dries fast!
  7. Allow truffles to dry and store in a lidded container until ready to enjoy. You can choose to refrigerate if you like, although this will likely impact the quality of the candy coating (the chocolate may sweat). I haven’t refrigerated them, since I opt to make the truffles the day I plan to serve them. If you do, comment below and let me know how they turn out!

Ways To Customize These Truffles

These truffles are so easy to customize to your liking! Check out a few of these tasty ideas to consider:

  • Ever had those chocolate-covered dry blueberries?! Swap the white chocolate for dark chocolate, the strawberries for freeze-dried blueberries, and coat everything in more dark chocolate.
  • Any freeze-dried fruit would be beautiful in these! Consider the chocolate pairing with the fruit: white chocolate with mango, dark chocolate with raspberry, milk chocolate with peach… The sky is the limit!
  • You can also omit the fruit, and choose to flavor your truffles with a extract! Peppermint, orange, almond, or rum extract would be beautiful!

All these things considered, take a look at these flavor combinations to try:

  1. Milk chocolate +rum extract
  2. White chocolate + freeze-dried mango +almond extract
  3. Dark chocolate + peppermint extract + crumbled Oreo, cookies to top 
  4. White chocolate + amaretto extract (or liquor!) + slivered almonds on top

Decoration Ideas For Truffles

  • These sprinkles are always a great option if you’re looking to decorate any sweet treats for a unique holiday. I leaned into Valentine’s Day, but there are so many fun sprinkle options out there!
  • You can also use different types of chocolate to drizzle over each truffle. I like layering different types for more contrast.
  • There’s nothing worse than scanning  a box of chocolates and not knowing what flavor each item holds! To make a nod to what the flavor of the candy is, consider sprinkling a little bit of the flavor on top of the candy shell! Slivered, almonds, crumbled cookies, fresh or dried versions of the fruit flavor.

  • 8 oz white chocolate (about 1 1/4 cups)
  • 1/3 cup heavy cream
  • 3/4 cup freeze dried strawberries, blended to a powder, it's ok if some bigger pieces remain!
  • 1 tsp pure vanila extract
  • 1 cup dark chocolate melting wafers see note
  • 1 cup white chocolate melting wafers see note
  • Assorted sprinkles, depending on what you're celebrating!

Notes

Here are the chocolate melting wafers I use. You can use an alternative, but I've been impressed with the availability and quality of these ones!
