Holy Hannah, it’s hot out.
Spoken like a true Minnesotan, you guys. In the winter, it’s too damn cold. In the Spring, it’s too damn rainy. In the summer, it exceeds 75 degrees, and it’s too damn hot.
(I’m GENERALLY speaking here. I happen to love all the seasons because I’m perfect {insert hair flip} ).
JKJK. But I actually do love all the seasons. Sure, we get the extremes up here – but they’re beautiful! And sure, it’s been freaking hot this summer. But that’s why I made this Coconut Water Limeade.
Lemme tell you about it.
By now, you likely know how hydrating coconut water is. It’s jam-packed with electrolytes, making it a perfect hot-weather beverage. But just plain ole’ coconut water? We can do better than that….
Enter, Coconut Water Limeade.
This recipe calls for honey, as opposed to sugar in the lime syrup. Because bikini season.
(And maybe you want to reserve a few extra kcals for the spirit you may or may not be adding? Just saying…)
So simple. So refreshing. So summer.

Coconut Water Limeade
Ingredients
- 1/2 cup water
- 1/2 cup honey
- 4 limes, quartered
- 1/2-3/4 cup freshly squeezed lime juice
- 4 cups coconut water
Instructions
- Add water and honey to a medium saucepan set over medium-low heat.
- Heat through until honey dissolves. Remove from heat, and add limes. Allow limes to steep until mixture cools through. Transfer to another dish to quicken this process.
- In a large pitcher, add cooled honey lime syrup, fresh squeezed lime juice, and coconut water. Stir to combine.
- Pop in the fridge to really bring the temp down. When ready to serve, pour over ice. Gin optional, though highly recommended.
Notes
- While I think the honey gives the simple syrup a nice floral flavor, feel free to substitute sugar.
- Add in lime juice to taste. If you prefer things extra tart, you may lean on the end of the 3/4 cup of lime juice.
- This is best served ice cold. Be sure to cool it in the fridge, and then serve over ice.
